Harvest Stir-Fry

Harvest Stir-Fry


I was looking thru my old favorites this morning and came across this recipe that I haven't used in a long time, but that we used to love! Gonna try it again later this week. Enjoy!

Ingredients

1 lb lean ground beef
1 medium onion, chopped
4 small yellow summer squash, chopped (I substitute yellow pepper for the squash)
6 medium tomatoes, quartered (or 1 can of stewed tomoatoes if you're feeling lazy - which I am!)
1 1/2 cups whole kernel corn
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper

Directions

- in large skillet, cook beef & onion over medium heat until meat is no longer pink
- drain
- add squash/peppers, tomatoes, corn & spices
- cook and stir for approx 10 minutes or until veggies are tender

That's it! Super yummy & super easy!

Quick Quiche


Quick Quiche (say that 10x fast!)

Ingredients:

- 3 cups grated Cheddar Cheese
- 1 1/2 cups chopped ham or chicken (cooked) *Great use for leftovers*
- 1/2 onion - chopped (or not. I hate onion)
- 2 cups frozen veggies of your choice - thawed and drained
- 1 1/3 cups milk
- 3 eggs
- 3/4 cups Bisquick mix
- 1/2 tsp salt
- 1/4 tsp pepper

Directions:

- Pre-heat oven to 400 degrees
- grease 1.4L (1 1/2 quart) baking dish
- in greased dish mix 2 cups cheese, meat, onion & veggies
- in large bowl beat milk, eggs, bisquit mix, salt & pepper until almost smooth
- pour mixture into baking dish with other ingredients
- sprinkle top with remainder of cheese
- bake 30-40 min or until golden brown

This is my mom's recipe from when we were kids. She made it every time we had leftover ham or chicken in the house. Enjoy! :)
