Breakfast For Dinner Casserole

Ingredients:

*NOTE - this casserole must chill either overnight or for several hours before baking. Throw this sucker together in the morning (it literally takes 5 minutes) and chill while you're at work.

- 10 to 12 slices of bread (brown is best)
- 3 to 4 tbsp Dijon or Honey Mustard (whichever you prefer)
- 1 1/2 cups chopped ham, bacon or turkey (I have even super-short-cut this & used bacon bits!)
- 1 cup shredded cheddar cheese
- 5 eggs
- 1 cup milk
- salt & pepper
- 1/4 cup butter or margerine
- 2 cups Rice Krispies

Directions:

- butter 4-6 pieces of bread (enough to cover bottom of your dish) and place BUTTERED SIDE DOWN in a large rectangular casserole dish
- spread "upper" side of bread with mustard
- create another "layer" using your ham/bacon/turkey
- create another "layer" using your shredded cheese
- create the top "layer" using the rest of your bread - BUTTERED SIDE UP
- in large bowl whisk together eggs, milk & dash of salt & pepper
- pour mixture evenly over casserole
*Cover and chill overnight or for several hours before baking*

- when ready to bake:
- melt 1/4 cup butter or margerine & add 2 cups Rice Krispies
- spread mixture over casserole
- bake at 350F for approx 1 hour

I have used this recipe as a quick dinner, as well as my tried & true Christmas morning recipe. I prep it the night before, throw it in the oven when the rugrat wakes me at 5am and we have a yummy breakfast while we open our gifts. I know it's July (!!!) but if you do decide to use this at Christmas, the green & red holiday Rice Krispies make it look really festive. :)

Shortcut Chicken Cordon Bleu

Ingredients:

1 tblsp butter or margarine
4 skinless, boneless chicken breast halves (about 1 lb)
1 can condensed Cream of Chicken soup
1/2 cup shredded Swiss cheese
1/2 cup chopped cooked ham
1/4 cup water
4 cups hot cooked egg noodles (about 4 cups dry)

Directions:

- melt butter in large skillet over medium-high heat
- add chicken and cook until browned on both sides (about 10 min)
- remove and set aside
- in same skillet combine soup, cheese, ham & water
- heat to boiling, stirring often
- return chicken to skillet & reduce heat to low
- cover & cook 5 min or until chicken is no longer pink, stirring occasionally
- serve with noodles

Makes 4 servings
Prep time: 10 minutes
Cook time: 20 minutes

*I tend to make this when there is leftover ham in the house. Great way to use it up when everyone is sick of sandwiches!

Monday Night Bow Tie Pesto

Ingredients:

- 1/2 cup cream cheese
- 1/2 cup basil pesto
- 1/2 cup milk (approx - depending on how thick you like your sauce)
- 450g bag of bow tie (Farfalle) pasta
- veggies of your choice - we use mushrooms & green beans

Directions:

- boil water for pasta and have it cooking while you do sauce
- saute your veggies in a large frying pan
- add cream cheese and stir until it melts
- add milk slowly until you get desired thickness
- stir in pesto
- allow mixture to simmer while pasta cooks
- add a splash more milk prior to serving if sauce is too thick
- coat pasta in sauce and serve

Serves 4 and is also great next day as a cold pasta salad-type dish.

Cook time - approx 15 minutes

*I've found that everyone likes their sauce a bit different, so tend to vary the amount of cream cheese, milk & pesto to suit. Look at me being all creative! ;)

Welcome!

OK I admit it - I am lazy in the kitchen! I am a 38yr old mother of 1 and I cook because we have to eat - bottom line. If it's not ready in 5 minutes, I don't want it! That being said, we need to eat better.
