Crock Pot Thai Chicken

Crock Pot Thai Chicken


This recipe was submitted by my friend (and former student) Erin. Thanks Erin!

Ingredients

- 2 ½ pounds of chicken pieces
- 1 cup hot salsa
- ½ cup peanut butter
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp fresh ginger
- White rice, for serving
- ½ cup chopped peanuts

Directions

-  Place chicken in a crock pot.
-  In a bowl, mix together salsa, peanut butter, lime juice, soy sauce, and ginger.
- Pour over chicken.
- Cover and cook on LOW for 8 hours or HIGH for 3-4 hours.
- To serve, place chicken over rice, pour sauce over chicken, sprinkle with peanuts.

Crock Pot Chicken Stew

Crock Pot Chicken Stew

*This is sooooo yummy I cannot even tell you.........

Ingredients

- 2 cups sliced carrots (OR 1 small bag of baby carrots - no chopping! Yay!)
- 1 cup chopped onion
- 1 large green pepper, sliced
- 1/2 cup sliced celery (I sometimes subsititute green beans)
- 2 cans chicken broth
- 2/3 cup all purpose flour
- 2 large boneless, skinless chicken breasts - *Quick Tip - My recipe says to cut them into pieces, but I find that if you put them in the crock pot whole, as they soften & cook you can break them apart with a spoon*
- 2 large potatoes - unpeeled & cut into 1-inch pieces (small redskins are good here too)
- 1 cup sliced mushrooms
- 1 tsp dried basil
- 3/4 tsp dried rosemary
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup heavy cream

Directions

- combine carrots, onion, green pepper & celery/beans in slow cooker
- stir in chicken broth, leaving 1 cup aside for later
- cover and cook on LOW for 2 hours
*Quick Tip - prep all of this (less the broth) the night before and then add the broth first thing in the AM. Let the veggies cook while you get ready for work & then move onto the next step right before you leave. By the time you get home - dinner! Voila!*

AFTER 2 HRS:

- in large bowl combine flour & remaining 1 cup of broth. Stir until smooth & stir into slow cooker
- add chicken, potato, mushrooms & spices
- cover and cook 4 hours or until veggies are tender and chicken is no longer pink
- just prior to serving, stir in heavy cream to thicken

*This makes 4 to 6 servings and is very hearty.

Harvest Stir-Fry

Harvest Stir-Fry


I was looking thru my old favorites this morning and came across this recipe that I haven't used in a long time, but that we used to love! Gonna try it again later this week. Enjoy!

Ingredients

1 lb lean ground beef
1 medium onion, chopped
4 small yellow summer squash, chopped (I substitute yellow pepper for the squash)
6 medium tomatoes, quartered (or 1 can of stewed tomoatoes if you're feeling lazy - which I am!)
1 1/2 cups whole kernel corn
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper

Directions

- in large skillet, cook beef & onion over medium heat until meat is no longer pink
- drain
- add squash/peppers, tomatoes, corn & spices
- cook and stir for approx 10 minutes or until veggies are tender

That's it! Super yummy & super easy!

Quick Quiche


Quick Quiche (say that 10x fast!)

Ingredients:

- 3 cups grated Cheddar Cheese
- 1 1/2 cups chopped ham or chicken (cooked) *Great use for leftovers*
- 1/2 onion - chopped (or not. I hate onion)
- 2 cups frozen veggies of your choice - thawed and drained
- 1 1/3 cups milk
- 3 eggs
- 3/4 cups Bisquick mix
- 1/2 tsp salt
- 1/4 tsp pepper

Directions:

- Pre-heat oven to 400 degrees
- grease 1.4L (1 1/2 quart) baking dish
- in greased dish mix 2 cups cheese, meat, onion & veggies
- in large bowl beat milk, eggs, bisquit mix, salt & pepper until almost smooth
- pour mixture into baking dish with other ingredients
- sprinkle top with remainder of cheese
- bake 30-40 min or until golden brown

This is my mom's recipe from when we were kids. She made it every time we had leftover ham or chicken in the house. Enjoy! :)

Breakfast For Dinner Casserole

Breakfast For Dinner Casserole

Ingredients:

*NOTE - this casserole must chill either overnight or for several hours before baking. Throw this sucker together in the morning (it literally takes 5 minutes) and chill while you're at work.

- 10 to 12 slices of bread (brown is best)
- 3 to 4 tbsp Dijon or Honey Mustard (whichever you prefer)
- 1 1/2 cups chopped ham, bacon or turkey (I have even super-short-cut this & used bacon bits!)
- 1 cup shredded cheddar cheese
- 5 eggs
- 1 cup milk
- salt & pepper
- 1/4 cup butter or margerine
- 2 cups Rice Krispies

Directions:

- butter 4-6 pieces of bread (enough to cover bottom of your dish) and place BUTTERED SIDE DOWN in a large rectangular casserole dish
- spread "upper" side of bread with mustard
- create another "layer" using your ham/bacon/turkey
- create another "layer" using your shredded cheese
- create the top "layer" using the rest of your bread - BUTTERED SIDE UP
- in large bowl whisk together eggs, milk & dash of salt & pepper
- pour mixture evenly over casserole
*Cover and chill overnight or for several hours before baking*

- when ready to bake:
- melt 1/4 cup butter or margerine & add 2 cups Rice Krispies
- spread mixture over casserole
- bake at 350F for approx 1 hour

I have used this recipe as a quick dinner, as well as my tried & true Christmas morning recipe. I prep it the night before, throw it in the oven when the rugrat wakes me at 5am and we have a yummy breakfast while we open our gifts. I know it's July (!!!) but if you do decide to use this at Christmas, the green & red holiday Rice Krispies make it look really festive. :)

Shortcut Chicken Cordon Bleu

Ingredients:

1 tblsp butter or margarine
4 skinless, boneless chicken breast halves (about 1 lb)
1 can condensed Cream of Chicken soup
1/2 cup shredded Swiss cheese
1/2 cup chopped cooked ham
1/4 cup water
4 cups hot cooked egg noodles (about 4 cups dry)

Directions:

- melt butter in large skillet over medium-high heat
- add chicken and cook until browned on both sides (about 10 min)
- remove and set aside
- in same skillet combine soup, cheese, ham & water
- heat to boiling, stirring often
- return chicken to skillet & reduce heat to low
- cover & cook 5 min or until chicken is no longer pink, stirring occasionally
- serve with noodles

Makes 4 servings
Prep time: 10 minutes
Cook time: 20 minutes

*I tend to make this when there is leftover ham in the house. Great way to use it up when everyone is sick of sandwiches!

Monday Night Bow Tie Pesto

Ingredients:

- 1/2 cup cream cheese
- 1/2 cup basil pesto
- 1/2 cup milk (approx - depending on how thick you like your sauce)
- 450g bag of bow tie (Farfalle) pasta
- veggies of your choice - we use mushrooms & green beans

Directions:

- boil water for pasta and have it cooking while you do sauce
- saute your veggies in a large frying pan
- add cream cheese and stir until it melts
- add milk slowly until you get desired thickness
- stir in pesto
- allow mixture to simmer while pasta cooks
- add a splash more milk prior to serving if sauce is too thick
- coat pasta in sauce and serve

Serves 4 and is also great next day as a cold pasta salad-type dish.

Cook time - approx 15 minutes

*I've found that everyone likes their sauce a bit different, so tend to vary the amount of cream cheese, milk & pesto to suit. Look at me being all creative! ;)

Welcome!

OK I admit it - I am lazy in the kitchen! I am a 38yr old mother of 1 and I cook because we have to eat - bottom line. If it's not ready in 5 minutes, I don't want it! That being said, we need to eat better. So I have committed myself to finding/posting/sharing FAST, EASY recipes that will satisfy my family without me breaking a sweat. ;) I will post my tried and true favorites & would welcome submissions from you as well.
